Ingredients:
For the White Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour (maida)
2 cups milk
oregano
Salt and pepper to taste
1/2 cup grated mozzarella cheese
For the Pasta:
225g pasta ( fettuccine, penne, or spaghetti)
2 tablespoon Salt
1 tablespoon oil
Optional additions: sautéed vegetables (mushrooms, spinach, peas), herbs (parsley, basil), etc.
Cook the Pasta:
In a large pan, bring water to a boil and add a generous amount of salt and oil. Add the pasta and cook it until it softens. It takes 8 to 10 minutes to cook on medium heat.
Drain the pasta and set it aside.
Prepare the White Sauce:
In a separate pan, melt the butter over medium heat.
Add the maida and whisk constantly to create a smooth paste. Cook for about 1-2 minutes, being careful that it doesn't brown.
Slowly pour the milk while whisking continuously to avoid lumps. Keep whisking and cooking until the sauce thickens and coats the back of a spoon. This is your white cream sauce.
Season the sauce with salt, pepper, and oregano.
If desired, stir in grated mozzarella cheese until it's melted and mix well into the sauce.
Combine Pasta and Sauce:
Add the cooked pasta to the white sauce and gently mix the pasta evenly.
If you want to adding sautéed vegetables mix them in at this point.
Serve:
Garnish with charades cheese.
