Here's a basic recipe for Paneer Butter Masala:
Ingredients:
200g paneer, cubed
2 large tomatoes
1 teaspoon cumin powder
1 teaspoon of coriander powder
2 green chilies
1-inch piece of ginger
10–12 cashew nuts soaked in warm water
1 bay leaf
2 green cardamoms (elaichi)
1/2-inch cinnamon (dal chini)
1 onion, finely chopped
1 teaspoon cumin powder
2-3 cloves of garlic, minced

2 tablespoons of butter
1 tablespoon of oil
1/2 cup fresh cream
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
Warm water if required
1 teaspoon sugar (optional, to balance the tang of the tomatoes)
pinch kasuri methi optional
Fresh coriander leaves for garnishing
Instructions:
- Blend tomatoes, ginger, soaked cashews, green chilies, coriander powder, garam masala, and chili powder.
- Heat oil and butter in a pan over medium heat.
- Add the cumin seed, bay leaf, cardamom, cinnamon, and minced garlic and cook for a minute.
- Add chopped onions. Sauté until they turn translucent.
- Then add turmeric powder and red chili powder. Sauté for another minute.
- Gradually add the blended gravy and salt. Let it cook on low heat for about 10–15 minutes.
- Add the cream and sugar (to balance the tang of the tomatoes) to the gravy and mix thoroughly. Let the gravy simmer for a few minutes.
- Now add the paneer cubes and garam masala. Gently mix the paneer into the gravy, taking care not to break the cubes. Let it cook for 5-7 minutes, allowing the paneer to absorb the flavors.
- If the gravy is too thick, you can add some water or milk to achieve the desired consistency. (optional, pinch kasuri methi )
- Once the paneer is cooked and the flavors are well combined, turn off the heat.
- Garnish with chopped, fresh coriander leaves.
Serve the paneer butter masala hot with naan, roti, or steamed rice.
