Classic Blueberry Muffins

Muffins are easy to make and typically contain ingredients such as flour, sugar, baking powder, eggs, butter or oil, milk, and flavorings or mix-ins depending on the desired craving. They can be baked in muffin tins, which are individual cups designed for muffin baking.

  • 100g all-purpose flour
  • 100g granulated sugar
  • 1 tablespoon baking powder
  • 100g butter room temperature
  • 3 eggs
  • 10g milk powder
  • 10g custard powder
  • 1 teaspoon vanilla essence
  • 50g fresh or frozen blueberries (if using frozen, do not thaw)

Instructions:

  • Preheat your oven to 185°C. Line a muffin tin with paper liners or grease the muffin cups.


  • In a large mixing bowl, sift together the flour, baking powder, milk powder, and custard powder. And whisk it until well combined. Keep it sideways.


  • In a separate bowl, whisk together the melted butter, sugar, and vanilla essence until it becomes light and fluffy, then add the eggs and whisk gently.


  • Pour the wet ingredients into the dry ingredients and gently stir with a wooden spoon or rubber spatula. Be careful not to overmix; the batter should still be slightly lumpy.


  • Gently fold in the blueberries, being careful not to crush them.


  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 to 3/4 full.


  • Bake the muffins in the preheated oven for about 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs attached.


  • Remove the muffin tin from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
