Eggless Ragi cookies

Ragi cookies are delicious and nutritious snacks. Ragi, also known as finger millet, is highly nutritious. The benefits of ragi are that it is high in protein, a weight loss agent, prevents your skin from aging, has loads of calcium, and has other beneficial nutrients.

Enjoy your nutritious ragi cookies. Ragi cookies are a healthy and nutritious alternative to traditional cookies, as they are made using ragi flour as the main ingredient.


Ingredients:

  • 150g ragi flour
  • 50g whole wheat flour
  • 100g butter (at room temperature)
  • 100g powdered sugar
  • 1/2 teaspoon baking powder
  • 10g milk powder
  • 10g custard powder
  • 1/2 teaspoon vanilla essence
  • 2-3 tablespoons milk (as needed)
  • Chopped nuts (like almonds or cashews) - optional
Instructions:

  • Preheat your oven to 175°C and line a baking tray with parchment paper.

  • In a mixing bowl, sift together the ragi flour, whole wheat flour, baking powder, milk powder, and custard powder. Mix well, and set aside.

  • In another bowl, whisk the butter and powdered sugar together until it becomes light and fluffy.

  • Add the vanilla essence to the butter-sugar mixture and mix well.

  • Mix the dry ingredients with the wet ingredients. Combine them to form a dough. If the dough is too dry, add 1-2 tablespoons of milk to bring it together. The dough should be soft but not sticky.

  • Optionally, you can add chopped nuts to the dough for added crunch and flavor.

  • Keep the dough in the refrigerator for 10 to 20 minutes to set.

  • When the dough is set, dust the marble top with flour and roll the dough lightly. Cut the dough with a biscuit cutter.

  •  Place the cookies on the prepared baking tray, leaving some space between each cookie.

  • Bake the ragi cookies in the preheated oven for about 12–15 minutes, or check the undersides, which should be golden at the end of cooking.

  • Once done, remove the cookies from the oven and let them cool on a wire rack.

 Your homemade Ragi cookies are now ready to be enjoyed! These healthy and tasty treats are perfect for snacking at any time. You can store them in an airtight container to keep them fresh for several days.

Note: Do not judge whether the biscuits are done by the color of the tops, which will be dark from the glaze and will give a false impression.
