  • 100g butter, softened
  • 100g powder sugar
  • 1 teaspoon vanilla essence
  • 200g all-purpose flour
  • 1 cup shelled pistachios, finely ground
  • 10g milk powder
  • 10g custard powder
  • 1/2 teaspoon baking powder
  • Optional: additional chopped pistachios for topping
  • 1-2 tablespoons milk if needed
Instructions:

  • Preheat your oven to 175°C and line a baking sheet with parchment paper.
  • In a bowl, whisk together the butter and sugar until light and fluffy.
  • Add the vanilla essence to the butter mixture and mix until well combined.
  • In a separate bowl, sift together together the all-purpose flour, custard powder, baking powder, and milk powder. Also, add the ground pistachios.
  • Gradually add the dry ingredients to the wet ingredients and mix until a soft cookie dough forms. You can add 1-2 tablespoons of milk to achieve the right consistency.
  • Take small portions of the dough and roll them into balls. Place the dough balls on the prepared baking sheet, leaving some space between them as they will spread slightly while baking.
  • If desired, gently press down on each cookie to slightly flatten them. You can also top each cookie with a few chopped pistachios for added texture and presentation.
