Lemon Rice

 Lemon rice is a popular South Indian dish that's easy to prepare and has tangy flavors. It's often enjoyed as a light and flavorful meal or as part of a larger spread. Here's how you can make Lemon Rice:


Prep time: 10 minutes

Cooking time: 15 minutes


Ingredients:

  • 1 cup cooked rice 

  • 2 tablespoons oil

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon urad dal 

  • 1/2 teaspoon chana dal 

  • A pinch of hing

  • 2-3 dried red chilies (broken)

  • 10-12 curry leaves

  • 2-5 Cashew Nuts

  • 1/4 teaspoon turmeric powder

  • 2 tablespoons peanuts 

  • 2-3 tablespoons lemon juice (adjust to taste)

  • Salt to taste

  • green chilies (optional)

  • Fresh coriander leaves for garnish 


Instructions:

  • In a pan, heat oil over medium heat.
  • Add mustard seeds and let them splutter.
  • Add urad dal and chana dal. Sauté until they turn golden brown.
  • Add hing, dried red chilies, peanuts, cashews, and curry leaves. Stir briefly.
  • Lower the heat and add turmeric powder to the tempering. Mix well.
  • Add the cooked rice and salt to the pan. 
  • Gently mix them with the tempering until the turmeric is evenly distributed.
  • Squeeze fresh lemon juice over the rice.
  • Start with 2 tablespoons and adjust according to your taste preference. Mix well.
garnish the lemon rice with fresh chopped coriander leaves.

Note: It can also be a great way to use leftover rice. Adjust the lemon juice, spices, and seasoning according to your taste.

Can be enjoyed on its own or with side dishes like yogurt, pickles, or a simple salad.
