Ingredients:


  • 100g butter

  • 100g sugar powder

  • 160g all-purpose flour

  • 10g milk powder

  • 10g custard powder

  • 20g ginger powder

  • 10g cinnamon powder

  • 2 drops Vanilla essence

  • 1 egg

  • 1 teaspoon baking powder

  • 1/4 cup crystallized ginger, finely chopped (optional, for added ginger flavor)

  • Additional granulated sugar for rolling the cookies


Instructions:

  • Preheat your oven to 175°C. Line a baking sheet with parchment paper or a silicone baking mat.

  • In a mixing bowl, sift together the flour, baking powder, custard powder, milk powder, ginger powder, and cinnamon powder. Mix them well.

  • In a separate bowl, whisk together the butter, sugar, and vanilla essence until light and fluffy.

  • Add the egg to the butter-sugar mixture and mix well.

  • Gradually add the dry ingredient mixture to the wet ingredients and mix until well combined. If using crystallized ginger, fold it into the cookie dough at this point.

  • Take small portions of dough and roll them into balls.

  • Roll each dough ball in granulated sugar until coated.

  • Place the coated dough balls onto the prepared baking sheet, leaving enough space between them as they will spread during baking.

  • Gently flatten each dough ball with your fingers or the back of a fork.

  • Bake the cookies in the preheated oven for 10–12 minutes, or check the undersides, which should be golden at the end of cooking.

  • Remove the baking sheet from the oven and allow the cookies to cool for a few minutes before transferring them to a wire rack to cool completely.


Once cooled, store the ginger cookies in an airtight container to keep them fresh.
